Most local restaurants, known as "hotelys" (don't let the name fool you, these are places to eat, not sleep!), especially in the highland region of Madagascar, will often throw this traditional dish on the menu. Coutlet is pork, deep-fried and served with rice, and usually a bowl of "roni" (hot broth) that you can pour on your rice for flavor.
