About the Author: Eleanor Partridge

Flaky, chewy, doughy flatbread (not really a pancake), similar in texture to south Indian paratha. Chopped green onions are baked into the dough. I like this best served over a fried egg and sweet basil leaves – the whole is then slathered with savoury brown sauce and rolled into a portable, only slightly messy, snack.
