Not the most photogenic of Taiwan’s ‘small eats,’ but certainly one of the most delicious and renowned…this omelette is made in the Taiwanese style (with flour as well as egg, which makes it translucent and glutinous in places). It’s stuffed generously with oysters and greens and slathered in sweet sauce.
