Jamaican cuisine could be called heavy, but better described as satisfying. Start with breakfast; the island favorites – ackee and codfish or liver or brown stewed chicken, are served with what is called ‘yard food’ – staple foods – green banana, potatoes, pumpkin, plantain, dasheen and dumpling – and I don’t mean “a choice of’’ the above, I mean all of it – yam plus green banana plus potato, plus pumpkin, plus dasheen and the dumpling. Yard foods were traditionally exactly that – sustaining food grown in ones own yard, and the term ‘Yard’ has now come to mean the island of Jamaica.
