Vigoron is a traditional Nicaraguan dish of yuca (like a potato) topped with chicharrones (salty, fried pork skins) and a vinegary cabbage slaw known as curtido, all served on a banana leaf. It's a great combination of contrasting flavors and tastes. In Granada you'll find it in restaurants and also in open-air kiosks in the Parque Colon.
