We stopped in the pretty colonial town of Villa de Leyva while driving from Bogota to San Gil, and spotted some old ladies with deep fryers near the Iglesia del Carmen. In the dying light of the day, they were busy frying up chicken empanadas for a growing crowd of locals. Deliciously crispy & meaty, with spicy aji on the side, they were perfect road-trip fuel.
