Eru is my favorite street food. It is a spinach dish cooked in palm oil with pieces of cow skin inside. I fell in love with it the first time that I ate it in Douala. We were having a lunch in church, and they were serving it and I thought to myself, “What is this?” I needed more. It was so…amazing. I had a Congolese missionary companion who also loved it, and every time we were in this one part in Douala, we would eat eru for lunch. It cost 400 francs, or 80 cents, for both of us.
