Let me explain how I understand it: It doesn’t matter what faith you are, it doesn’t matter what your taste preferences are, it doesn’t matter what gender you are. You are in the desert and you must survive. And koshari is the dish that unites everyone. In addition, it is so common in the East that you probably will not find a single street cafe in Egypt where you would not be treated to fragrant koshari.
