The menu will often call them "African cakes," but if you ask a local they will laugh at that title. Typically made from corn flour, bananas, eggs, sugar and deep-fried, but they are said to exist in many variations. The fluffier the better. The sliced papaya has been arbitrarily added by the author, desperate for something healthy and colourful!
