Bissap (hibiscus juice)

Sweet and tangy bissap is one of Senegal's handful of wonderful local-fruit juices, made from the dried red flowers of the hibiscus plant. You'll see it in every market and on nearly every Senegalese restaurant in town, alongside other juices like gingembre (ginger) and bouye (baobab fruit). Best to ask for no ice ("sans glace").
