On the mainland, soba noodles are generally made from buckwheat. Okinawa soba differs in that the noodles are thicker, flatter and made from wheat flour. The noodles come in broth with fish cakes, pork bellies, and scallions. Optional toppings include ginger and koregusu (chilis soaked in rice liquor). The latter is a must if you like spicy food.
