Shojin Ryori, or Japanese Zen Buddhist cuisine, is served at a number of temples in Kyoto. The approach may vary by temple but can follow precepts on the number, type, flavour and ingredients of dishes that are included. It was invariably delicious, involving simple but exquisite preparations of vegetebles, tofu and rice.
