Izumo (a region of eastern Shimane prefecture and a present-day city west of Matsue) is famous for its soba (buckwheat noodles). This particular dish is soba in dashi (fish broth) with yama-imo (mountain potato), a raw quail egg, ginger, scallions, and seaweed, served hot.
