One of the 'small eats' for which Tainan is most famous - noodles in a soupy, savoury addictive sauce of minced pork, generally with a single shrimp as topping (the egg was extra). Supposedly invented by a local street vendor in the late 1800s and popular as a way to stretch supplies during the slack season for fishermen.
