Take a basket, fill with your favourites from a huge selection of meat, vegetables, tofu, noodles, you name it. The whole lot will be chopped, boiled in a savoury broth and plated up (sometimes in the broth as soup). Basic and good. You’ll see these spreads on food carts all over – it’s either lu wei or for frying or grilling. All delicious.
