This special order suckling pig is what pork is all about! The piglet os spit mounted and gradually turned high over hot charcoal for several hours, to ensure the juiciest of meat and crispiest, wafer-thin skin. Frequently basted, and then served with a local dipping sauce with chillies and soy, the piglet is presented in ts entrety. Dig in!
