Bún Bò Giò Heo

Submitted by vietnamfoodsafari
Bún Bò Giò Heo
Da Nang, Vietnam

Bún bò giò heo, or beef and pork knuckle noodle soup. When served this soup a large pork knuckle is added along with slices of beef, pork dumplings and pork blood sausage. It's topped with onions, fresh chives and coriander. The soup is rich and spicy with a strong scent of lemongrass, but sweeter than other Vietnamese noodle soups.
