
Guatemalans like their stews! Jocon de pollo is one of my favorites. Simmered in a broth of tomatillos, cilantro, pumpkin and sesame seeds, and chile peppers, Jocon is a flavorful but light dish. If you have been surviving on potatoes, tortillas, and rice during your travels, the green beans and chayote are a nice touch as well.
