While I was skeptical at first of something that looked like a giant bowl of onions, vinegary escabeche hits the spot on a hot day in Belize. Made with pickled carrots and jalapenos, chicken, vinegar and (obviously) onions, escabeche is a light alternative when you have had enough fried food to last a lifetime.
