Whole fried fish

Old Bank, Isla Bastimentos, Panama

At this super-tranquilo thatched-roof restaurant on the water, the delectable fish (pargo, or red snapper, during our visit) is fried and draped with peppers and onions. Try the “hot mama” sauce on the accompanying coconut rice, beans, salad, and patacones, and wash it all down with a cold Balboa beer. With the Caribbean breeze in your face, this is exactly where you want to be.
