Spaghetti Vongole. This locally-invented dish is more delicious than anything you can imagine. A simple combination of olive oil, garlic and cherry tomatoes converts a small number of ingredients into a complex flavourful sauce, while fresh clams infuse any lingering remnants of sea water into the perfectly al dente pasta. This dish displayed its full potential on our last night at Caffe Positano. Magnifico!
