Cheese, or kaas, is huge in Holland. Along with the many cheese shops and market vendors of Amsterdam, restaurants often offer cheese plates for dessert (or starters, in our case!). Here we had a flavorful 2-year-old farmer's cheese, a rosemary goat cheese, and a spicy young cheese w/black pepper, served w/berries and sweet raisin bread.
