Rich and spicy goat meat, tempered by the taste of smoke and the earthen pot from whence it emerged, dripping hot savory grease. Made an excellent taco with homemade tortillas, salsa verde, and lime juice. Served with a hot cup of greasy but delectable ‘consome,’ or the broth created during the barbacoa process.
