
Mirza ghasemi is a traditional Northern Iranian dish made with smoked eggplants, garlic, tomatoes, and eggs. Originating from the Gilan province by the Caspian Sea, it’s known for its rich, smoky flavor and simple, rustic ingredients. Typically served with flatbread or rice, this dish is a staple in many households in northern Iran and often associated with family gatherings and local hospitality. Though sometimes found in regional restaurants, the most authentic versions are made at home (like this one, at my grandmother’s house), often over an open flame to bring out the deep smoky taste.
