Ceviche is a preparation very commonly found in coastal regions of Latin American countries. It consists of raw fish marinated in lemon juice and herbs. The fish, in this case white fish called ‘merluza,’ cooks lightly in the citrus juices and, mixed with raw onions, turns out a tangy but very flavorful mix. Very fresh and light!
