Almost as famous as Peru’s ceviche, the Pisco Sour is a sour (duh!) concoction of egg whites, pisco, simple syrup and lime. It’s garnished with a few splashes of bitters for color. While they can be found across the country, Café Haiti near the central park has great people watching.
