Long before North Americans started importing quinoa, it was a staple in northern Argentina. It’s everywhere! My favorite way to consume this healthy grain was as part of a pastel de quinoa. It’s a bit like a shepard’s pie- cheese, olives, eggs, ground beef and quiona.
