Not to be confused with tamales, Bolivian humitas are a delicious mix of corn, cheese, sugar, cinnamon and anise. They can be ordered baked or boiled – although they both tasted the same to me. Locals say the anise helps digest the corn at high altitudes. Given that La Paz is at 12,000 feet, you’ll need all the help you can get so dig in.
