Organic, grass-fed (well, alfalfa, really) and locally-sourced (usually from the backyard), cuy is a must-try dish when traveling to Ecuador. Originally reserved for Inca royalty, cuy is now a ubiquitous dish. Everyone you ask will tell you a different place that has the "best" cuy around. This one is in Mocha, near Riobamba.
