Fritada is pork cooked first in water with spices and then slowly cooked in its own fat. This version by Mercedes Cachinguango Farinango (Mama Miche), now in her 90's, is truly amazing. Eaten with mote (hominy), cheese, potatoes, sweet plantain and a tall glass of chicha (a fermented corn drink). Highly recommended if you can make it to Atuntaqui.
