Hacienda San Agustín de Callo
Locro de papas is a creamy, potato and cheese-based soup, traditionally served with avocado and hot sauce. San Agustin's silky and delicate version is the best I've ever had. Highly recommended after a horseback ride in the foothills of the Cotopaxi volcano.
