Breakfast half-smoke

At this friendly, old-school soul-food diner, we learned what a great breakfast meat the locally beloved half-smoke makes. Half pork and half beef, it's spicy, meaty, holds up well on the grill, and is absolutely delicious alongside fried eggs and, here, yummy stewed apples.
