The Red Iguana is a colorful Mexican eatery with multiple locations that’s an absolute must in Salt Lake City. And if you come here, you gotta get mole. There’s lots to choose from, but we went with the enmoladas because we needed something quick and easy -- we literally called it in and picked it up en route to the airport. And I don't regret it!
