Migas at Ruth’s Diner

Ruth’s Diner is a Salt Lake City icon, a historic trolley-car diner since 1930 that's located in a scenic canyon. For us it was a great introduction to Utah! The menu is pretty big, but the migas are a popular dish (and there is a sizeable Mexican community in SLC), and they didn't disappoint: two eggs scrambled with corn tortilla, chorizo, peppers and cheese, alongside rice and beans, guacamole, and flour tortillas. So much food! Other great things here are the incredible fluffy hot biscuits they serve in lieu of bread (good luck not filling up on that), the house-smoked salmon salad, and the perfectly classic mac and cheese.
