Champuru is a traditional Okinawan stir-fry that generally has tofu, vegetables, egg, and meat. There are many types. This one is fu champuru. “Fu” is wheat gluten, which was a cross between noodles and bread. This dish had fu, many types of veggies, and maybe a little pork. Of all the restaurants in the food court, this one was the most crowded!
