Juicy steaks of Caurel, seasoned in garlic and olive oil. The red-fleshed fish is cooked slowly to be succulent and tender. At this exotic beach resort in Sierra Leone, the fish is caught only a few hours before dinner, making it one of the freshest fishes to be eaten. There is hardly any time for the marinade to soak up. Served with couscous.
