Sierra Leone-style banana pancakes

These pancakes, prepared for breakfast one morning by Tiwai Island's excellent cook, were delicious--doughy and subtly sweet with banana flavor, but savory too, fried in groundnut oil & counting rice, garlic, and onion among its ingredients. It was served with an oily but tasty pepper sauce (or "fry stew"), made of onion, tomato, and bongo (smoked fish).
