Sierra Leone-style banana pancakes

Submitted by lsr
Tiwai Island Wildlife Sanctuary
Tiwai Island, Sierra Leone

These pancakes, prepared for breakfast one morning by Tiwai Island's excellent cook, were delicious--doughy and subtly sweet with banana flavor, but savory too, fried in groundnut oil & counting rice, garlic, and onion among its ingredients.
