Senegalese-style dibi is roasted lamb, served w/caramelized onions & mustard on greasy brown paper (typically the whole thing is wrapped up and thrown in an oven like that). You'll see "dibiteries" everywhere in Dakar, but sometimes restaurants serve dibi too, like Le Point E did on this day. This meat was gnaw-on-the-bone delicious.
