Hairy Crabs

A Shanghai food-scene main feature during the hairy crabs season in Jiangsu province. The freshwater crabs are available Sept-Nov in restaurants, best paired with heated Chinese 'yellow rice wine' with ginger shreds to balance the 'yin yang' of the body. The crab-roe taste is extraordinary and get their name from their hairy pincers.
