Nan khatai are buttery, cardamom flavoured biscuits similar to shortbread that originated in Surat (via the Dutch) in the 16th century. In Delhi, the biscuits are baked by street vendors in makeshift coal ovens that are nothing more than two woks on top of each other with coals packed on, so you get them fresh, warm and golden brown from the fire.
