It's persimmon season in Japan. Originally from Nara, this persimmon leaf-wraped sushi (zushi) is not something commonly seen in Japanese restaurants or shops outside Japan. The sushi rice with raw fish (usually mackerel or salmon) wrapped in salted persimmon leaves and kept for few days, which makes this zushi have a strong and delicious umami taste.
