Chillo is red snapper, which is caught in the island. This was a 2 lb beauty that was baked to perfection: crispy outside and soft buttery flesh inside. Served with mofongo, which is a native plantain mash, cheesy potatoes and a fresh salad. We paired this with cold white sangria and thought this might be the best meal of our lives!
