
Sfogliatelle – in southern Italy, I found this little gem, which I had always known by its American name, Lobster Tail. The process of making this is incredibly labor intensive; even in a factory most of it is done by hand! Impossibly thin, delicate layers of dough, wrapped around a dried fruit sweetened ricotta filling.
