What: Suadero is tender slow-cooked beef brisket, somewhat similar to pork carnitas in texture but softer and meltier. It’s very popular in the capital—not to mention really delicious—so we’re including it here.

Order: Un taco de suadero (7p). Here, it’s piled high with meat, topped with the usual diced onions and cilantro. Tables provide limes and three different salsas.
