Papa rellena is a very typical snack or appetizer found all over Peru and even Ecuador or Chile. Although found in restaurants too, it is popularly sold as a snack by vending ladies in buses. It consistes of mashed potato with a filling of minced meat and vegetables or cheese, golden fried.
