Cachapas are corn pancakes usually stuffed with local cheese such as Venezuela’s popular ‘queso de mano’ or ‘queso Guayanes.’ The corn is not ground as finely as the dough for arepas so these salty sweet snacks have a nice texture from the corn kernels.
