What: Gelatin, a sweet, pulled, taffy-like dulce that’s not as innocent as it looks: Pata means “paw” or “leg”; like many gelatins, this treat is indeed made with the hoof of a cow—plus sugarcane and often vanilla, so all you taste is the deliciously sweet bit. Still: Vegetarians beware. Most vendors just call it “gelatina” and will usually give you a little taste of it if you’re curious to try before you buy.
