After an exhausting two-day drive from Charlotte, NC, Erica and I arrived in Beaver Creek. We met with my daughter Jaimie, who lives in this mountain paradise. Dinner was to be at the Grouse Mountain Grill, a very special restaurant on the mountain. The executive chef is my son-in-law David, one of the most highly respected chefs in the area. There were four others sharing this meal with me: Jaimie, Erica, Tracy and Kate. The stage was set for a wonderful evening. We were all ravenous and could not wait for the meal to begin. We were offered perfectly picked-out wines that would enhance every course. A perfect beginning was a raw ahi tuna dressed with a green onion and soy dressing, avocado , and macadamia nuts. Following this delectable appetizer was the soup: truffle-scented cream of celery root and potato. The main course for me was grilled ahi tuna on cab and celery root ravioli with romesco sauce and garlic-scented rapini. There were many other amazing main dishes to choose from but this one appealed to my sense of culinary adventure. Chocolate, my favorite thing in the world to eat, covered all possible dessert choices. Sitting, looking out the windows at the beautiful snow-covered mountains of Beaver Creek, this experience was surely heavenly.
