This beautiful trio of veggies--eggplant, green pepper, and potato, stir-fried in garlic, vinegar, and soy sauce--is apparently a Dongbei classic (di san xian), hailing from northeast China, the region on which this restaurant focuses. It's absolutely delicious: very fresh, a little sweet, and a great complement to all the meat you're sure to eat here.
